Kounta Chats with the Woman Behind our Favourite Grab-n-Go Comfort Food: Angela Redfern of Ripe Deli

We caught up with one of our favourite foodies who’s also a loyal Kounta user and the woman behind Ripe Deli, Angela Redfern.

Who doesn’t adore a good home-cooked meal that’s made with love, fresh ingredients, and is of the comfort food variety?

Then again, who’s got hours and hours to spend in the kitchen preparing three delicious and nutritious meals on the regular? Having easy, swift access to really tasty and fresh food sounds amazing, but it’s a luxury most people in Auckland didn’t have until Ripe Deli came along. The Grey Lynn hot spot has been serving up delightfully rustic homemade meals for sixteen years now. Their loyal customer base has been with them since the beginning, along with a continuously growing list of new devotees, and for good reason. Their food is hearty, healthy, mouthwateringly delicious and is always prepared fresh for take-out.

Ripe’s chefs get really creative with the food as well. Beetroot red velvet cake, anyone? Instead of using processed dyes, they make this popular dessert using beets for colouring, which tastes divine and doesn’t overpower the taste of the cake. White chocolate icing balances out the “maybe-this is-a-little-too-healthy-for-cake” beet vibes, which brings the entire dessert full circle. Also on offer are delicious and hearty salads, sandwiches, wraps, scones, dreamy flat whites, and don’t even get us started on their cookies. Oh yeah, they cater as well, so if you live in the neighbourhood, there’s really no excuse not to eat Ripe Deli’s food, like, all the time.

We caught up with one of our favourite foodies who’s also a loyal Kounta user, and the woman behind Ripe Deli, Angela Redfern. She gave us a glimpse into the life of a busy restaurateur, and shared with us how she uses Kounta across multiple Ripe Deli sites.

Did you know from a young age that you’d work in the food industry?

Yes, I’ve always been interested in cooking and have always loved the hospitality world – still do! The journey cooking has taken me on has been an amazing one, both from a “running-a-business” point of view, in addition to the actual food aspect of it all. There’s so much to learn, so many mistakes to be made, and fresh new challenges every week.

How did you discover Kounta?

We discovered Kounta when we decided to get a new POS System and began talking with fellow hospo friends. Some were already using it and were very happy with it. So, good old word of mouth.

How do you use Kounta?

At the moment, we use Kounta as our POS system, specifically the on-account integration. We’re working on using it for inventory, purchase orders and B2B in order to replace using Shopify for our on-account “online” customers. That’s all a work in progress right now.

What are the primary benefits you gain from using Kounta?

The primary benefits are the visibility and the ease of real-time reporting, along with integration to other applications and sales information. I also love the modern architecture, the fact that it’s scalable, easy to use, and easy to update to the POS display. Finally, I love that the customer can use their account across all stores.

When it comes to running multiple Ripe Deli sites…

Do the Kounta tools you use differ based on location?

We use the same tools at each location, which makes things easy. However, it’s always great to know that if one part of the business has a need that the others don’t, we can customise and isolate any changes or products to that specific location, this will definitely be useful as we continue to grow.

In general, what are some challenges you’ve faced running multiple sites?

The challenges of having multiple sites is the coordination of every aspect of each business, while keeping the quality of service and products the same across them all. Communication between all staff can be challenging as well.

What are your future plans for Ripe Deli and accompanying projects, such as cookbooks and other related endeavors?

Right now, we’re just working on what we’ve created while tidying up loose ends. We’re getting new, better systems in place, implementing the proper training, and ensuring everything is all running well. The wellbeing of the crew is of huge importance to me and it takes time to create great teams, but in terms of what’s in the pipeline, who knows? Another cookbook or a new store, perhaps. Never say never!

We sometimes wonder if Angela – affectionately known as “Ange” by patrons and pals – is hiding several clones of herself somewhere in her pantry. Not only is she running one of Auckland’s most popular take-out joints, she’s also busy a mum of two, she just wrapped her third bestselling cookbook, and she has a second Ripe Deli café which opened in September of 2017 over at the Giltrap Building. She’s certainly a powerhouse, and regardless of whether or not there’s more than one Ange laying low somewhere, we’re not asking questions. We’re just here to enjoy the food.
